Watermelon Rind Preserves


Watermelon rind preserves is sweet and crunchy dessert.


Ingredients


  • 1 kg watermelon rinds
  • 2 tsp baking soda
  • 800 g sugar
  • 1 l water


Directions


  1. Prepare the watermelon rinds - trim green skin and pink flash. Cut the rinds into squares or wedges. In a large saucepan pour 2 l of water and add 2 tsp of baking soda. Stir well to dissolve completely and add watermelon rinds. Let it stand for 3-4 hours. Rinse rinds thoroughly with cold water and drain.

  2. In a large pot combine the sugar and water. Bring the syrup to a boil and add watermelon rinds. Boil for 10 -15 minutes on a medium-low heat. Then put off the fire and let the mixture cool completely. Repeat this procedure again. For the third time let the mixture cook for 30 minutes, stirring frequently. The rinds must be golden and transparent. Remove from the heat and ladle into the sterilized glass jars. If you want to preserve it for longer, can the jars or store them in the fridge for 1-2 months.
