Matsoni Soup


Matsoni is a Georgian dairy product very similar to yogurt. Matsoni soup has a creamy texture and slightly sour, fresh flavor.


Ingredients


  • 250 g Matsoni
  • 500 ml Water (room temperature)
  • 1 Egg
  • 1 tbsp Butter
  • 1 tbsp Sunflower oil
  • Fresh coriander
  • Fresh dill
  • Fresh or dry mint
  • 1 Onion
  • 2 tbsp Wheat flour


Directions


  1. In a bowl pour matsoni, add water, egg and flour. Mix well. In a large saucepan put butter and sunflower oil. Add chopped onion and fry it on a medium heat until caramelized. Add matsoni mixture and stir well to avoid the flour lay on the bottom. Simmer until thickened slightly, for 10 minutes, stirring occasionally. If the soup is very thick, add some boiling water. Finally, stir in the chopped herbs, season with salt and serve hot.
