Fried Liver With Tomato – Piquant Warm Salad


Georgian cuisine is rich in meat dishes. Fried liver is one the most popular and beloved dishes after khinkali (Georgian dumplings), mtsvadi (barbeque) and kababi (Georgian kebab). There are different ways of preparing liver and here we offer one of them. One may also call it warm salad with roasted liver cubes and tomato, although it can be consumed cold as well.


Ingredients


  • 350 g beef liver
  • 2 tomato
  • 1 onion
  • 2 cloves garlic
  • bunch Fresh coriander
  • Flour for rolling
  • oil for frying
  • Salt and pepper to taste
  • 2 tbsp pomegranate seeds
  • 2 tbsp sunflower oil for frying


Directions


  1. Dice tomato and onion.  Finely chop coriander and garlic. Meanwhile wash and clean the liver. Drain well and cut in cubes. Roll liver pieces in flour and fry in oil on all sides until golden-brown. Mix liver with vegetables in bowl, add salt and pepper to taste and mix well again. Add pomegranate seeds. Cover the bowl and leave for 10 -15 minutes to let all ingredients and flavors combine.
