Satsivi


Satsivi or turkey in a walnut sauce is a traditional dish for New Years Eve's dinner in Georgia.


Ingredients


  • 1 Turkey (medium-sized)
  • 1 kg Walnuts
  • 250 g Onions
  • 1 tsp Dried blue fenugreek, ground
  • 1 tsp Dried Marigold, ground
  • 1 tbsp Dried coriander, ground
  • 0.2 tsp Clove, ground
  • 0.5 tsp Cinnamon, ground
  • 2 cloves Garlic, minced
  • 2 tbsp Wheat flour
  • Salt to taste
  • Red hot chilli powder to taste


Directions


  1. Chop or mince the walnuts. In a bowl put the chopped walnuts, add mashed garlic and all spices. Mix together. Add some salt and chili powder too. Cut onions. Remove the fat of the turkey from the stock to sauté onions in a large saucepan. Add the flour to thicken the sauce and continue to cook until golden. Add a bouillon little by little and mash sautéed onions well.

  2. Wash and clean turkey and put it in a large pan. Add enough water to cover the turkey and cook it well. While boiling, remove the foam from the stock. Cut cooked turkey in pieces and sprinkle with some salt. Some people prefer to discard the bones from the turkey.

  3. Add minced walnuts and spices to the saucepan, mix well and stir constantly. Add remaining stock and continue to cook about 10 minutes. Place the pieces of cooked turkey in the saucepan and let it cool. Keep Satsivi in a refrigerator. Serve cold.
