Shkmeruli or chicken in garlic sauce is very popular Georgian dish which comes from the region of Racha, from the village called Shkmeri. Shkmeruli is easy to prepare and its taste is unforgettable.


  • 1 Chicken
  • 2 heads Garlic
  • 300 ml Water, milk or light cream
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Butter
  • 1 tbsp Sunflower oil for frying


  1. Season the chicken with salt and pepper. Heat some oil on a large frying pan and roast chicken to both sides, until golden and crispy. Remove roasted chicken from the pan and cut into pieces. Clean and grate or mash garlic cloves. Add butter and garlic to the grease left in the frying pan. Saute on a medium heat until golden. Add roasted chicken pieces, salt and water. Simmer for about 2-3 minutes.
