Chakhokhbili


Chakhokhbili is a traditional Georgian chicken stew with tomatoes.


Ingredients


  • 1 chicken
  • 2 onions, chopped
  • 2 tbsp sunflower oil
  • 2 cloves garlic, mashed
  • 500 g tomatoes, chopped
  • 1 bay leaf
  • 2 tbsp cilantro, chopped
  • 1 tbsp purple basil, chopped
  • 1 tbsp parsley, chopped
  • 1 tsp hot pepper, chopped
  • salt to taste
  • pepper to taste


Directions


  1. Clean and cut the chicken into pieces and season it with salt an pepper. Put a large saucepan on a medium heat. Add oil and chicken pieces. Cook for 10-12 minutes. Add onions, garlic and bay leaf. Stir well and continue to cook until golden.

  2. Add chopped tomatoes. Turn the heat down to medium-low and cover the saucepan with a lid. Cook for 20-25 minutes, stirring occasionally. When the chicken is ready, add chopped greens and pepper. Cook for 1-2 minutes. Taste the stew and season with salt and pepper.
